Maine Baked Beans (Mom’s Recipe)

Night Before Prep:  Sort thru the dry beans and pick out any stones or damaged beans.  Rinse the beans well and place them in a pan for soaking. Add enough water to cover the dried beans about 2 inches; cover and soak the beans overnight.

The following morning, drain the beans and rinse well. Combine all ingredients and about 4 cups of fresh water in a bean pot or slow cooker.  Cover and cook on low for 8-12 hours.

  • 2 pounds yellow eye beans 
  • 1/4 cup brown sugar
  • 1 lb. lean salt pork
  • 1 tablespoon salt
  • 1 teaspoon pepper
  • 2 teaspoon dry mustard
  • 1/8 teaspoon ginger
  • 2/3 cup molasses
  • 1/3 cup maple syrup 
  • 1 large onion (peeled) (whole / chopped)
  • fresh water

Oven 350 degrees. Stir and continue cooking until baked beans are tender and the sauce forms a carmelized, rich, and thick stew. Enjoy Delicious Meal!
